Brew #4 – Orange Clove Mead

6/19/2011 – Brew Day
Recipe:
2 Gal Spring water
7.75 lbs Honey
50 Raisins
3 Cinnamon sticks
2 Valencia oranges (sliced, squeezed, including peels)
1 Navel orange (sliced, squeezed, including peels)
2 pinches Allspice
2 pinches Nutmeg
3 whole Cloves
¼ tsp Potassium metabisulfite (sanitizer)
½ oz Fleischmann’s bread yeast

Mixed water, honey, oranges, allspice, nutmeg, sulfite, and yeast in a sanitized brew pot. Squeezed orange slices in mixture and stuffed equally into 3 jugs (1 gal glass). Added 17 raisins, 1 cinnamon stick, 1 clove to each jug. Racked equal parts of liquid into each of 3 jugs. In the future, it would probably be better to add ⅙ oz yeast to each jug (for more even distribution).
